Honey
Steamer
10 Gallons extract/ specialty
grains
2 lbs. wheat DME
10 lbs. light DME
1/2 lb. carmel malt 10* Lovibond
6 lbs. honey
1 oz. Cascade hops (bittering)
1 oz. Goldings hops (aroma)
2/3 tsp. Irish moss
1 tsp. salt
2 tsp. gypsum
California Ale yeast
Steep carmel malt in water
overnight.
Add this water to boil kettle and top off with enough water to make 10
gals.
Bring to a boil and add all of the DME.
Reduce heat and add the bittering hops.
Add salt, Irish moss and gypsum.
Boil 50 minutes then add the aroma hops.
Simmer very low for 15 minutes.
Turn off the heat.
Remove the hop socks and add the honey.
Turn the heat back on just for a couple of minutes on low.
Run through wort chiller and
pitch the yeast.
OG: 1.068
FG: 1.022
Alcohol is about 6.7 percent
It seems to get drier as it
ages.
